This omlett rocks!  Take 3 egg whites, and 1/2 yoke, scramble.  Mix in 1/3 cup yellow saffron rice, pour into lightly oiled pan. Cover with a small amount of swiss cheese.  Pull off burner and place under the broiler until done.  You will never notice you are eating egg whites because of the yellow rice (its a mental thing) - but they do kind of look like maggots.. ummmm
